Make Your Own: Yogurt

Making your own yogurt is a great way to have yogurt at the ready whenever you want it. My main issue when I first brought my yogurt maker was that where brought yogurt comes in a reusable and recyclable container, sachets come in a foil, nonrecyclable packet. Brought yogurt costs about $4 on special and yogurt powder costs about $3.70 on special. So, what’s the point?!

What if I told you there is a way to get 15 litres plus of yogurt out of ONE SACHET of powder?! That is a hell of a lot less rubbish (and money!). The key to this is to buy your milk powder from Bin Inn or another bulk food store. 

 

  1. The obvious way
    Make yogurt as per the instructions on the packet – usually a sachet of powder to 1ltr of water, bang it in the yogurt maker and, surprise, surprise! After 8-10 hours, YOGURT!

                                                     Cost = $3.70/ltr Rubbish = 1 foil sachet
     

  2. The less is more way
    Using the same principal as the packet instructions but substitute half of the yogurt powder for milk powder. Place in yogurt maker with hot water and leave for 12 hours. Keep the unused yogurt powder in a sealed container in the fridge.

                                                    Cost = $3.19/ltr Rubbish = ½ foil sachet
     

  3. Even less is more way
    Use 2 tablespoons of yogurt powder and sub out the rest for milk powder (usually totals 1 ½ cups). Place in yogurt maker with hot water and leave for 12 hours. Keep the unused yogurt powder in a sealed container in the fridge.

                                                 Cost = $2.93/ltr Rubbish = 1/10 foil sachet

  4. Pro Yogurt
    Don’t use any powder at all. Instead, use 2 tablespoons of a previous batch and make the powder up with milk powder (1½ cups). This way you are able to have an endless supply by using the last batch as a started.

                                                         Cost = $2.68/ltr Rubbish = None
                         (other than what you used for your started ie. Previous batch/brought)
     

  5. Frozen Yogurt
    Take the Pro Yogurt concept a step further and FREEZE STARTERS. Put a batch of yogurt in an ice cube tray and then throw in a couple of cubes when you want a batch. Mix up 1 ½ cup milk powder, cooled boiled water, a couple of cubes and a tablespoon of sugar.

                                                         Cost = $2.68/ltr Rubbish = None                     
                          (other than what you used for your started ie. Previous batch/brought)
     

  6. Raw Milk Option
    Instead of using milk powder use raw milk. Pour in 1 litre raw milk, add a couple of tablespoons of a previous batch (or 2 table spoons powder, or 2 cubes frozen batch). Place in yogurt maker with hot water and leave for 12 hours.

    ​                 Cost = $3.37/ltr Rubbish = What ever the milk came in and 1/10th foil sachet.

 

 

 

You can also make dairy free yogurt (Coconut Yogurt) and Kerfir. I am yet to try these to check back in later for those!

 

 

 

THINGS TO REMEMBER
 

- Keep the yogurt powder you are not using in a sealed container in the fridge. This will keep the cultures alive.

- The longer you leave your mix in the yogurt maker, the more sour it will be. So if you like it sweet, take it out around 8-10 hours, if you like it sour leave it for 12 hours. 
 

- If you don't have a yogurt maker, no problem! Put your mixture in a sealed jar (or container) and place in a slowcooker with hot water. This will do the same as a yogurt maker.
